Foxtel Now currently has limited episodes of season seven available, as well as limited episodes of the new season eight, which appear to be being released on the platform at a delay compared to the broadcast on Foxtel proper.
Foxtel Now comes with a 10-day free trial for new customers and is available on iOS, Android, PlayStation 4, Google Chrome on Windows and Mac, Telstra TV, and Google Chromecast. The PlayStation 3 and Xbox One run the older Foxtel Play app, which can access the same content, but won't play shows in high definition.

If you want to catch up on earlier episodes of Last Week Tonight you can buy and download individual episodes and full seasons from iTunes, Google Play and YouTube. But note that not all seasons and episodes are currently available from these services.
